This course features shabu-shabu made with rare Agu pork, which is rarely distributed outside of Okinawa mainland.

Agu pork has the following characteristics:

• The meat is tender and juicy.

- It has a rich umami flavor, and the fat also has a deep, satisfying taste.

- Low melting point, resulting in a melt-in-your-mouth texture.

- The proportion of marbling is 5% higher than that of regular pork.

- The melting point of the fat is 38.1 degrees Celsius, which is lower than that of regular pork.

• Low cholesterol levels, healthy
